Ingredients
  

For the Chicken and Veggies
  • 1 pound chicken breasts, chopped into bite-sized pieces You can easily swap in thighs for extra flavor.
  • 1 red bell pepper Feel free to use yellow or orange for a festive twist.
  • 1 zucchini You can replace it with asparagus in spring.
  • 1 red onion Shallots work too if you’re looking for something more delicate.
  • to taste salt Essential for bringing out the natural flavors.

  • 2 tablespoons olive oil Extra virgin is preferred.
For the Herby Ranch
  • 1 cup Greek yogurt Substitute sour cream if desired.
  • 2 tablespoons fresh parsley, chopped Dried herbs can work in a pinch.
  • 2 tablespoons fresh dill, chopped Dried herbs can work in a pinch.
  • 1 tablespoon lemon juice Lime is a fun alternative.
  • 1 teaspoon garlic powder Fresh garlic is great for a punchier flavor.
For Assembling
  • 4 pieces pita bread You can use whole wheat or gluten-free pitas.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the chicken, bell pepper, zucchini, and red onion.
  3. Drizzle generously with olive oil, then season with salt, pepper, and garlic powder.
  4. Stir everything until well-coated.
  5. Spread the mixture onto a parchment-lined sheet pan.
Cooking
  1. Bake for 18-20 minutes until the chicken is golden and the veggies are tender.
  2. While the chicken bakes, make the herby ranch by mixing Greek yogurt, parsley, dill, lemon juice, salt, and pepper in a small bowl.
Assembly
  1. Once your chicken and veggies are ready, take a warm pita and fill it with the mixture.
  2. Drizzle the herby ranch inside and add any additional toppings you desire.

Notes

For a healthier option, swap olive oil with cooking spray. Add seasonal veggies for variety, or cheese for indulgence. Allow cooked chicken to rest for 5 minutes before assembly for juiciness.
