Ingredients
  

For the Fajitas
  • 1 lb flank steak Can substitute with skirt steak or chicken.
  • 3 bell peppers (red, green, yellow) Can substitute with zucchini or asparagus.
  • 1 onion (yellow or red) Shallots can be used as a substitute.
  • 2 tablespoons olive oil Avocado oil can be used as an alternative.
  • 2 teaspoons chili powder Smoked paprika can be used for a different flavor.
  • 1 teaspoon cumin
  • 2 limes (juiced) Lemon can be used if limes are not available.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, chili powder, cumin, lime juice, salt, and pepper. Add the flank steak, coating it well and letting it marinate while you chop the veggies.
  3. Slice the bell peppers and onion into thin strips.
Cooking
  1. On a large sheet pan, spread the marinated steak and veggies in a single layer.
  2. Place the pan in the preheated oven and roast for about 15–20 minutes.
  3. Let the steak rest for 5 minutes before slicing it against the grain.
Serving
  1. Fill warm tortillas with the steak and veggie mixture, and top with your favorite fixings like sour cream, salsa, or fresh cilantro.

Notes

For added spice, toss in some jalapeños before roasting. You can also create a taco bar with various toppings or serve it over a bed of greens for a salad.
