Prepare the Grits
- Bring 4 cups of water or broth to a boil in a medium pot.
- Once boiling, slowly stir in the grits.
- Reduce the heat and let the mixture simmer, stirring occasionally, until thick and creamy (about 15 to 20 minutes).
Cook the Shrimp
- Melt the butter in a skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds, until fragrant.
- Add the shrimp, season with smoked paprika, salt, and pepper.
- Cook for 3 to 4 minutes, flipping halfway, until shrimp are opaque and cooked through.
Combine and Finish
- Stir shredded cheddar cheese into the cooked grits until melted and creamy.
- Taste and adjust seasoning if needed.
- Serve the shrimp over grits and top with sliced green onions.
Notes
For plant-based version, substitute shrimp with sautéed mushrooms. For a spicy kick, add cayenne pepper. Store leftovers in an airtight container for about 2 days.
