Ingredients
  

For the Grits
  • 1 cup grits, stone-ground Choose stone-ground for an authentic texture.
  • 4 cups water or broth Chicken or vegetable broth adds extra flavor.
For the Shrimp
  • 1 pound shrimp, peeled and deveined Fresh or frozen works well.
  • 4 tablespoons butter Can substitute with olive oil for a lighter version.
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika Adds depth of flavor.
  • Salt and pepper To taste.
  • 2 green onions sliced For freshness and color.
  • 1 cup shredded cheddar cheese Optional, but adds indulgence.

Method
 

Prepare the Grits
  1. Bring 4 cups of water or broth to a boil in a medium pot.
  2. Once boiling, slowly stir in the grits.
  3. Reduce the heat and let the mixture simmer, stirring occasionally, until thick and creamy (about 15 to 20 minutes).
Cook the Shrimp
  1. Melt the butter in a skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  3. Add the shrimp, season with smoked paprika, salt, and pepper.
  4. Cook for 3 to 4 minutes, flipping halfway, until shrimp are opaque and cooked through.
Combine and Finish
  1. Stir shredded cheddar cheese into the cooked grits until melted and creamy.
  2. Taste and adjust seasoning if needed.
  3. Serve the shrimp over grits and top with sliced green onions.

Notes

For plant-based version, substitute shrimp with sautéed mushrooms. For a spicy kick, add cayenne pepper. Store leftovers in an airtight container for about 2 days.
