Preparation and Cooking
- Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Toss the shrimp into the skillet, season with salt, pepper, and red pepper flakes. Cook until they turn pink and opaque, about 3–4 minutes.
- Pour in the broth and lemon juice, stirring to combine. Bring to a simmer.
- Add the cooked orzo and fresh spinach to the skillet. Stir until the spinach wilts and everything is heated through, about 2 minutes.
- Crumble feta cheese over the top and garnish with fresh herbs. Plate up and enjoy your comforting bowl of Shrimp Orzo!
Notes
For added flavor, consider a splash of white wine during cooking or seasonal vegetables like zucchini or cherry tomatoes. Store leftovers in an airtight container for up to 3 days; freeze for about 2 months.
