Preparation
- Heat a skillet over medium-high heat and add a tablespoon of oil.
- Brown the ground beef or turkey, breaking it apart with a spatula until no pink remains.
- Sprinkle in the taco seasoning with a splash of water, stir, and simmer until the sauce clings to the meat, about 2–3 minutes.
- Meanwhile, toss the greens into a large salad bowl. Add black beans, corn, tomatoes, red onion, and shredded cheese.
- Stir together sour cream and salsa (or Greek yogurt and lime for a lighter dressing) in a small bowl.
- Add the cooked meat to the salad bowl and toss gently to combine.
- Right before serving, fold in most of the crushed Doritos, reserving a handful for topping.
- Garnish with cilantro, avocado slices, a squeeze of lime, and the remaining Doritos for maximum crunch.
- Serve immediately so the chips stay delightfully crisp.
Notes
Store components separately: keep the cooked meat, dressing, and crushed Doritos in separate containers in the fridge for up to 3 days. Assemble just before serving to preserve crunch.
