  • 1 pound ground beef or ground turkey browned and seasoned with taco spices
  • 1 packet taco seasoning or homemade: chili powder, cumin, smoked paprika, garlic powder, salt
  • 6 cups chopped romaine or mixed greens crunchy base for freshness
  • 2 cups crushed Nacho Cheese Doritos for signature crunch and flavor
  • 1 cup canned black beans rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup diced red onion optional, for sharpness
  • 1 cup shredded cheddar or a dairy-free alternative melty comfort
  • 1/2 cup corn kernels fresh, frozen and thawed, or roasted
  • 1/3 cup chopped cilantro bright herbal lift
  • 1/2 cup sour cream or plain Greek yogurt creamy binder
  • 1/3 cup salsa or pico de gallo fresh tomato flavor
  • 1 lime juiced
  • for serving Avocado slices creamy contrast

Method
 

Preparation
  1. Heat a skillet over medium-high heat and add a tablespoon of oil.
  2. Brown the ground beef or turkey, breaking it apart with a spatula until no pink remains.
  3. Sprinkle in the taco seasoning with a splash of water, stir, and simmer until the sauce clings to the meat, about 2–3 minutes.
  4. Meanwhile, toss the greens into a large salad bowl. Add black beans, corn, tomatoes, red onion, and shredded cheese.
  5. Stir together sour cream and salsa (or Greek yogurt and lime for a lighter dressing) in a small bowl.
  6. Add the cooked meat to the salad bowl and toss gently to combine.
  7. Right before serving, fold in most of the crushed Doritos, reserving a handful for topping.
  8. Garnish with cilantro, avocado slices, a squeeze of lime, and the remaining Doritos for maximum crunch.
  9. Serve immediately so the chips stay delightfully crisp.

Notes

Store components separately: keep the cooked meat, dressing, and crushed Doritos in separate containers in the fridge for up to 3 days. Assemble just before serving to preserve crunch.
