  • 2 pounds boneless, skinless chicken thighs or breasts if you prefer a leaner meat
  • 1 cup BBQ sauce your favorite homemade or store-bought
  • 1 medium onion, sliced adds depth of flavor
  • 3 cloves garlic, minced because everything is better with garlic!
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika optional for extra smoky flavor

Preparation
  1. Begin by slicing the onion and mincing the garlic.
Layering Ingredients
  1. In your slow cooker, spread the sliced onions on the bottom.
  2. Place the chicken on top, creating a cozy nest.
  3. Sprinkle the minced garlic over the chicken.
  4. Slather your favorite BBQ sauce over the chicken.
  5. Add salt and pepper according to your preference.
  6. You could also sprinkle some smoked paprika for extra flavor.
Cooking
  1. Cover your slow cooker with the lid and set it to low for 6-8 hours or high for 3-4 hours.
Serving
  1. Once cooked, shred the chicken right in the cooker with two forks and mix it with the remaining sauce.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Freezes well for up to 3 months.
