  • 3 cups Chopped vegetables (carrots, celery, onion) Feel free to mix in peas or corn for extra flavor.
  • 6 cups Chicken broth Low-sodium options are recommended.
  • 2 cups Dumpling dough (store-bought or homemade) Greek yogurt can substitute sour cream for a lighter dumpling.
  • 1 tablespoon Mixed seasonings (thyme, rosemary, salt, pepper) Adjust to taste.
  • 1 tablespoon Cornstarch Use to thicken broth if desired.

Preparation
  1. Chop the vegetables and season the chicken.
  2. Place the chopped vegetables at the bottom of the slow cooker.
Assembly
  1. Nestle the chicken on top of the chopped vegetables.
  2. Pour the chicken broth over the chicken and sprinkle with seasoning.
Cooking
  1. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  2. About 30 minutes before serving, prepare the dumpling dough.
  3. Roll out the dough or cut it into squares and place them atop the chicken mixture.
  4. Cover and cook for an additional 30-40 minutes until the dumplings are fluffy.
Serving
  1. Ladle the warm chicken and dumplings into bowls and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen in portions for later use. Adjust seasoning and include fresh herbs before serving for added flavor.
