Preparation
- Season the beef bites with salt, pepper, and smoked paprika.
- Heat a skillet over medium-high heat and quickly brown the pieces in a tablespoon of butter or oil.
- Transfer the browned beef into the slow cooker.
- Pour in the beef broth, Worcestershire sauce, and soy sauce.
- In the same skillet, melt the remaining butter and add the minced garlic. Sauté for 30–60 seconds until fragrant.
- Pour the garlic butter over the beef in the slow cooker.
Cooking
- Cover and cook on low for 3 to 4 hours, or on high for 1.5 to 2 hours until the beef is tender.
- For a thicker sauce, remove the lid for the last 30 minutes or whisk in a cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon cold water).
Finishing
- Stir gently, taste and adjust seasoning, then sprinkle with chopped parsley before serving.
Notes
For healthier options, use lean beef and reduce butter. To make it creamy, stir in 1/2 cup sour cream or cream cheese at the end. Additional veggies like mushrooms or carrots can be added.
