Preparation
- Chop the onions, carrots, and garlic to unlock fantastic flavors.
- Layer chicken thighs at the bottom of the slow cooker.
- Add chopped onions, carrots, and garlic on top of the chicken.
- In a bowl, combine brown rice, chicken broth, lemon juice, and herbs. Stir well, then pour over the chicken and veggies.
- Close the lid and set the slow cooker to low for 4-5 hours or high for 2-3 hours.
- When the time is up, check that the chicken is cooked through and the rice is fluffy. Gently stir to combine.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to three months. You can prep everything the night before and refrigerate the slow cooker insert.
