  • 1 cup Brown rice Feel free to swap with quinoa for a gluten-free alternative.
  • 4 cups Chicken broth Water can be used in a pinch.
  • 1/4 cup Lemon juice Freshly squeezed for the best flavor.
  • 3 cloves Garlic Minced; garlic powder can be a suitable substitute.
  • 1/4 cup Fresh herbs A mix of parsley and thyme is recommended; dried herbs will work as well.
  • 1 medium Onion Chopped for sweetness.
  • 2 medium Carrots Chopped; feel free to add your favorite vegetables.

Preparation
  1. Chop the onions, carrots, and garlic to unlock fantastic flavors.
  2. Layer chicken thighs at the bottom of the slow cooker.
  3. Add chopped onions, carrots, and garlic on top of the chicken.
  4. In a bowl, combine brown rice, chicken broth, lemon juice, and herbs. Stir well, then pour over the chicken and veggies.
  5. Close the lid and set the slow cooker to low for 4-5 hours or high for 2-3 hours.
  6. When the time is up, check that the chicken is cooked through and the rice is fluffy. Gently stir to combine.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to three months. You can prep everything the night before and refrigerate the slow cooker insert.
