For the Cooking

Preparation
  1. Pat the chicken breasts dry with paper towels.
  2. In a bowl, whisk together the lemon juice, minced garlic, oregano, thyme, salt, and pepper to create a marinade.
  3. Place the chicken breasts in the slow cooker and pour the marinade over them.
  4. Pour the chicken broth over the chicken.
Cooking
  1. Cover and cook on low for 4-6 hours, or until the chicken is tender.
  2. About 30 minutes before serving, cook the rice using the same broth from your slow cooker.
  3. Fluff the rice and serve topped with the lemon herb chicken and a drizzle of the remaining sauce.

Notes

Consider quinoa or cauliflower rice instead of white rice for a nutritious alternative. Use seasonal vegetables for a color boost. Add a teaspoon of Dijon mustard for a tangy kick.
