  • 1 pound Beef sirloin Lean and tender, perfect for slow cooking.
  • 2 cups Bell peppers Use a mix of red, green, yellow, or orange.
  • 1 large Onion Sweet onions are a good choice for a milder taste.
  • 2 cloves Garlic Fresh is best, but powdered can work in a pinch.
  • 1/4 cup Soy sauce Tamari makes a great gluten-free substitute.
  • 1 cup Beef broth Vegetable broth can be used for a lighter option.
  • 2 tablespoons Cornstarch Arrowroot powder is a good alternative.
  • 1 teaspoon Black pepper Adjust according to your preference.
  • 1/2 teaspoon Red pepper flakes Optional, for an extra kick.

Method
 

Preparation
  1. Slice the beef into thin strips against the grain.
  2. Chop the bell peppers and onion into thin slices.
  3. Mince the garlic.
Mixing the Sauce
  1. In a bowl, combine soy sauce, broth, and minced garlic. Set aside.
Layering Ingredients
  1. In your slow cooker, place the beef strips at the bottom.
  2. Add the sliced onions and bell peppers on top.
Cooking
  1. Drizzle the soy sauce mixture over the layered ingredients, making sure they’re all covered.
  2. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  3. About 30 minutes before serving, mix cornstarch with a little cold water and stir it into the cooker to thicken the sauce.
Serving
  1. Fluff the sauce and serve hot over a bed of rice or noodles.

Notes

Consider adding broccoli, carrots, or snap peas for more vegetables. Serve with fresh cilantro for a festive touch.
