  • 1 medium Onion Adds depth and sweetness.
  • 3 cloves Garlic Fresh cloves provide a lovely aroma.
  • 1 cup Chicken or Vegetable Broth For moisture and enhanced flavor.
Spices
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Thyme
  • 1 teaspoon Caraway Seeds Feel free to swap with fennel seeds.

Method
 

Preparation
  1. Slice the onion and apples.
  2. Sear the pork loin in a hot skillet for about 3-4 minutes on each side until golden brown (optional).
Cooking
  1. In your slow cooker, place the sauerkraut at the bottom.
  2. Layer the onions, followed by the sliced apples. Sprinkle with caraway seeds and thyme.
  3. Place the pork loin on top. Pour in the broth.
  4. Sprinkle salt and pepper over the pork.
  5. Cover and set your slow cooker on low for 6-8 hours or high for 4-5 hours.
Serving
  1. Once the pork is tender and shreds easily, serve it with the sauerkraut mixture.

Notes

Add red pepper flakes for heat, or try dried cranberries for sweetness. Allow the pork to rest for a few minutes after cooking for better juiciness.
