- Pour the sauce mixture over the chicken, ensuring they’re completely covered.
Cooking
- Cover the slow cooker and set it to low for 6 hours or high for 3 hours.
- About 20 minutes before serving, add the fresh spinach and stir gently.
- Once the chicken is fully cooked and tender, shred it with two forks directly in the slow cooker.
Notes
For a lighter version, replace coconut milk with Greek yogurt. Add seasonal veggies like zucchini or bell peppers for variety.
