Method
 

Preparation
  1. Place the chicken breasts in your slow cooker.
  2. In a mixing bowl, combine coconut milk, minced garlic, dried oregano, sun-dried tomatoes, salt, and pepper.
  3. Pour the sauce mixture over the chicken, ensuring they’re completely covered.
Cooking
  1. Cover the slow cooker and set it to low for 6 hours or high for 3 hours.
  2. About 20 minutes before serving, add the fresh spinach and stir gently.
  3. Once the chicken is fully cooked and tender, shred it with two forks directly in the slow cooker.

Notes

For a lighter version, replace coconut milk with Greek yogurt. Add seasonal veggies like zucchini or bell peppers for variety.
