Preparation
  1. Season the chicken breasts generously with salt and pepper. Place them at the bottom of the slow cooker.
  2. Sprinkle the minced garlic over the chicken, then layer in the sun-dried tomatoes and dried Italian herbs.
  3. Pour the chicken broth over everything, ensuring that the chicken is mostly submerged.
Cooking
  1. Cover and set your slow cooker to low for 6 hours.
  2. Once cooking time is up, carefully remove the chicken and stir the heavy cream into the sauce until well combined.
  3. Shred the chicken with two forks and return it to the pot; stir to coat in the sauce.

Notes
