Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Lean and easy to cook; they soak up the flavors beautifully.
  • 1 cup chicken broth For added flavor and moisture; low sodium is a healthier option.
  • 1 cup heavy cream This is the magic ingredient for that creamy sauce; substitute with Greek yogurt for a lighter twist.
  • 2 cups spinach Fresh or frozen; it’s packed with nutrients and adds color.
  • 1 cup sun-dried tomatoes For a burst of sweetness; opt for the kind packed in oil for extra richness.
  • 4 cloves garlic, minced Fresh garlic for depth; jarred garlic can be used in a pinch, but fresh is always best.
  • 1 tsp dried oregano A classic Tuscan herb that enhances the overall flavor.
  • Salt and pepper Essential for seasoning.

Method

Preparation
  1. Begin by placing the frozen or thawed chicken breasts in the bottom of your slow cooker—don’t worry if they overlap slightly.
  2. In a bowl, mix the chicken broth, heavy cream, minced garlic, oregano, salt, and pepper. Whisk it together until well combined.
  3. Pour this mixture over the chicken, ensuring it covers every piece.
  4. Add the sun-dried tomatoes onto the chicken, pressing them down slightly for even distribution.
  5. Finally, throw in the spinach on top.
Cooking
  1. Cover your slow cooker, set it on low, and let it work its magic.
  2. When it’s time to serve, shred the chicken directly in the slow cooker using two forks for that pull-apart texture.
  3. Toss everything together and serve warm over your favorite pasta or rice.

Notes

Healthy Swaps: For a lighter version, replace heavy cream with light coconut milk or Greek yogurt. To enhance flavors, consider adding fresh herbs or seasonal vegetables.
