- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring until they become translucent.
- Slice the smoked sausage into bite-sized pieces and add them to the pot. Cook for about 5 minutes until they brown slightly.
- Add the diced potatoes and green beans. Stir everything together and let it cook for a couple of minutes.
- Add the chicken broth to the pot, ensuring all ingredients are covered. Season with salt and pepper, add any optional seasonings if using.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes or until the potatoes are tender.
- Taste and adjust seasonings as needed. Serve in bowls and enjoy.
Notes
Can be made vegetarian with plant-based sausage and vegetable broth. Great served with crusty bread or cornbread.
