  • 1 lb Smoked Sausage Choose your favorite type.
  • 2 cups Fresh Green Beans Trimmed and cut in half.
  • 3 medium Potatoes Peeled and diced.
  • 1 medium Onion Diced.
  • 3 cloves Garlic Minced.
  • 4 cups Chicken Broth Homemade or low-sodium.
  • 2 tablespoons Olive Oil For sautéing.
  • Salt and Pepper To taste.
  • Optional Seasonings Worcestershire sauce or paprika.

Cooking Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring until they become translucent.
  2. Slice the smoked sausage into bite-sized pieces and add them to the pot. Cook for about 5 minutes until they brown slightly.
  3. Add the diced potatoes and green beans. Stir everything together and let it cook for a couple of minutes.
  4. Add the chicken broth to the pot, ensuring all ingredients are covered. Season with salt and pepper, add any optional seasonings if using.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes or until the potatoes are tender.
  6. Taste and adjust seasonings as needed. Serve in bowls and enjoy.

Notes

Can be made vegetarian with plant-based sausage and vegetable broth. Great served with crusty bread or cornbread.
