Preparation
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish and set it near the stove.
- Pat chicken breasts dry and season with salt, pepper, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 2 minutes per side.
- In a mixing bowl, combine sour cream, 1/2 cup of cheddar, Parmesan, minced garlic, and dried thyme. Stir until smooth, then fold in optional vegetables if using.
Cooking
- Place the seared chicken in the baking dish and spoon the sour cream mixture evenly over each piece.
- Sprinkle the remaining 1/2 cup cheddar cheese on top.
- Cover loosely with foil and bake for 20 minutes.
- Remove foil and bake for another 10-15 minutes until chicken reaches 165°F (74°C) and the top is bubbly and lightly golden.
- Let rest for 5 minutes, garnish with green onions or chives, and serve hot.
- Optional: Broil for 1-2 minutes for a crisp topping, watching carefully.
