Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with a touch of butter or non-stick spray.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar with an electric mixer until it’s light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually mix the dry ingredients into the wet ingredients, being careful not to overmix.
  6. Spread the dough evenly into the baking dish, smoothing the top with a spatula.
Baking
  1. Bake for 25-30 minutes, until the edges are golden and a toothpick inserted into the center comes out clean.
  2. Allow to cool completely before cutting into bars.

Notes

These bars can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze them individually wrapped in plastic wrap for up to three months. When ready to enjoy, thaw at room temperature or microwave briefly.
