  • 1 tablespoon olive oil Extra virgin for added richness.

  • to taste fresh basil or parsley Add it at the end for brightness.

Method
 

Cooking Pasta
  1. In a large pot, boil salted water and cook your pasta according to package instructions until al dente.
Sizzling Bacon
  1. While the pasta cooks, heat olive oil in a skillet over medium heat. Add the bacon strips, cooking until crispy.
Adding Garlic
  1. Once the bacon is crisp, remove it from the skillet and drain it on paper towels. Add minced garlic to the rendered bacon fat, sautéing until fragrant for about 30 seconds.
Combining Tomatoes
  1. Pour in the diced tomatoes (including the juices) and sprinkle in the red pepper flakes. Bring to a gentle simmer for about 5 minutes.
Mixing It Up
  1. Chop the crispy bacon and stir it back into the sauce. Combine the mixture with the drained pasta, tossing well.
