Preparation
- Begin by bringing a large pot of salted water to a boil.
- Add your pasta to the boiling water and cook according to package directions until al dente. Reserve ¼ cup of the pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
- Crumble the spicy Italian sausage into the skillet, cooking until browned and fully cooked through, around 7-8 minutes.
- Stir in the minced garlic and cook for 1-2 minutes until fragrant.
- Add the crushed tomatoes, oregano, and red pepper flakes. Season with salt and pepper. Let the sauce simmer for about 10 minutes.
- Toss the drained pasta into the sauce, adding a splash of reserved pasta water to help combine everything. Mix gently until the pasta is evenly coated.
- Serve piping hot in bowls, topped with fresh basil, and a sprinkle of Parmesan if desired.
