Preparation
  1. Begin by bringing a large pot of salted water to a boil.
  2. Add your pasta to the boiling water and cook according to package directions until al dente. Reserve ¼ cup of the pasta water before draining.
  3. In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
  4. Crumble the spicy Italian sausage into the skillet, cooking until browned and fully cooked through, around 7-8 minutes.
  5. Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  6. Add the crushed tomatoes, oregano, and red pepper flakes. Season with salt and pepper. Let the sauce simmer for about 10 minutes.
  7. Toss the drained pasta into the sauce, adding a splash of reserved pasta water to help combine everything. Mix gently until the pasta is evenly coated.
  8. Serve piping hot in bowls, topped with fresh basil, and a sprinkle of Parmesan if desired.
