Main Ingredients
  • 1 pound spicy Italian sausage Can substitute with chicken or turkey sausage for a leaner option.
  • 1 cup orzo pasta Substitutes like farro or quinoa are acceptable.
  • 1 medium onion, diced Yellow or sweet onions work well.
  • 3 cloves fresh garlic, minced Powdered garlic can be used in a pinch.
  • 1 large bell pepper, diced Any color you prefer adds sweetness and crunch.
  • 1 can (14.5 oz) diced tomatoes Fire-roasted adds a lovely smoky flavor.
  • 2 cups vegetable or chicken broth Homemade is best, but store-bought works for convenience.
  • 1 tablespoon olive oil Feel free to use your preferred cooking oil.
  • to taste salt and pepper Essential for balancing flavors.
  • to garnish chopped fresh basil and parsley Fresh herbs elevate this dish beautifully.

Method

Cooking
  1. In a large skillet or pot, heat the olive oil over medium heat until it shimmers.
  2. Add the diced onions and sauté for about 3-4 minutes until they become translucent.
  3. Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes until fragrant and tender.
  4. Add the spicy Italian sausage to the pan, breaking it apart as it browns.
  5. Once browned, stir in the canned tomatoes and let it sizzle.
  6. Pour in the broth and bring the mixture to a simmer.
  7. Add orzo to the skillet, ensuring it's well-distributed in the sauce. Let it simmer for about 10-12 minutes until cooked al dente.
  8. Season with salt and pepper to taste, finishing with a sprinkle of fresh basil and parsley before serving.

Notes

For a creamier texture, stir in cream cheese or Greek yogurt at the end. Consider adding seasonal vegetables for extra nutrition and color. Fresh thyme or oregano can enhance the flavor profile.
