Preparation
  1. Marinate the Steak: In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Coat the steak in the mixture and let it marinate while you prep the veggies.
  2. Prep the Veggies: Slice your bell peppers and onion into thin strips.
Cooking
  1. Heat the Skillet: In a large skillet over medium-high heat, add a splash of olive oil. As the oil shimmers, add the marinated steak.
  2. Sear the Steak: Cook for 3–4 minutes on each side for medium-rare, until nicely charred.
  3. Remove and Rest: Transfer the cooked steak to a plate and let it rest for a few minutes. Turn down the heat and add the veggies to the skillet, sautéing until tender and caramelized, about 5-7 minutes.
  4. Slice the Steak: Once rested, cut the steak against the grain into thin strips.
  5. Combine: Add the steak back to the skillet with the veggies, tossing everything together to warm through.
  6. Serve: Lay out the tortillas and let everyone make their own fajitas, loading them with their favorite toppings.

Notes

For an extra kick, add diced jalapeños or hot sauce. You can also swap steak for marinated grilled portobello mushrooms or firm tofu for a vegetarian version.
