- Using a sharp knife, carefully cut a pocket into each chicken breast, ensuring not to slice all the way through.
Cooking
- Generously fill each pocket with the spinach mixture, using toothpicks to seal the opening if needed.
- In an oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Once out of the oven, let the chicken rest for a few minutes, then slice and serve warm.
Notes
Consider substituting feta with mozzarella for a milder taste or add parmesan for extra flavor. Use lower-fat cream cheese or Greek yogurt for a lighter version.
