Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chopped spinach, cream cheese, feta, minced garlic, salt, and pepper. Stir until well blended.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast, ensuring not to slice all the way through.
Cooking
  1. Generously fill each pocket with the spinach mixture, using toothpicks to seal the opening if needed.
  2. In an oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  3. Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Once out of the oven, let the chicken rest for a few minutes, then slice and serve warm.

Notes

Consider substituting feta with mozzarella for a milder taste or add parmesan for extra flavor. Use lower-fat cream cheese or Greek yogurt for a lighter version.
