Preparation
- In a bowl, whisk together olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Add the flank steak, ensuring it’s well-coated with the spice mix. Let it marinate for at least 15 minutes.
- Slice the bell pepper and onion into thin strips.
Cooking
- Heat a large skillet over medium-high heat. Once hot, add the marinated steak. Cook for about 3-4 minutes on each side.
- Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes.
- In the same skillet, add the bell pepper and onion. Cook for about 5-7 minutes until tender and slightly caramelized.
- While the veggies are cooking, slice the rested steak against the grain into thin strips.
- Add the sliced steak back to the skillet with the veggies and squeeze fresh lime juice over everything. Toss to combine.
- Warm your tortillas on a dry skillet for about 30 seconds until soft.
Serving
- Fill tortillas with the steak and veggie mix, and top with your favorite toppings.
