Ingredients
  

For the Steak
  • 1 pound flank steak (or skirt steak) Tender cuts work best for fajitas.
  • 2 tablespoons olive oil For marinating the steak.
  • 1 tablespoon chili powder Adds flavor and a bit of spice.
  • 1 teaspoon cumin Earthy flavor complementing the steak.
  • 1 teaspoon garlic powder For added depth of flavor.
  • 1 teaspoon smoked paprika Enhances the overall taste.
  • Salt and pepper, to taste
For the Veggies and Serving
  • 1 each bell pepper (any color, or a mix) Adds color and crunch.
  • 1 large onion Sliced for sautéing.
  • 1 each Juice of 1 lime For seasoning and brightness.
  • Tortillas (flour or corn, as you prefer) To serve the fajitas.
  • Optional toppings: sour cream, guacamole, salsa, cilantro, lime wedges Customize to preference.

Method
 

Preparation
  1. In a bowl, whisk together olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
  2. Add the flank steak, ensuring it’s well-coated with the spice mix. Let it marinate for at least 15 minutes.
  3. Slice the bell pepper and onion into thin strips.
Cooking
  1. Heat a large skillet over medium-high heat. Once hot, add the marinated steak. Cook for about 3-4 minutes on each side.
  2. Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes.
  3. In the same skillet, add the bell pepper and onion. Cook for about 5-7 minutes until tender and slightly caramelized.
  4. While the veggies are cooking, slice the rested steak against the grain into thin strips.
  5. Add the sliced steak back to the skillet with the veggies and squeeze fresh lime juice over everything. Toss to combine.
  6. Warm your tortillas on a dry skillet for about 30 seconds until soft.
Serving
  1. Fill tortillas with the steak and veggie mix, and top with your favorite toppings.
