  • 1 pound flank steak Tender and flavorful, can substitute with sirloin.
  • 1 bell pepper bell pepper (any color) Adds sweetness and crunch.
  • 1 medium onion Yellow or red, caramelization enhances sweetness.
  • 2 tablespoons olive oil For searing.
  • 1 Juice of lime For a zesty kick.
  • 1 teaspoon chili powder Adjust based on heat preference.
  • 1 teaspoon cumin Earthy and aromatic.
  • to taste salt and pepper Essential seasonings.
  • 8 small tortillas Corn or flour, based on preference.

Method
 

Preparation
  1. If your flank steak isn’t already trimmed, slice off any excess fat. Sprinkle with salt, pepper, chili powder, and cumin, massaging the spices into the meat.
  2. Slice the bell pepper and onion into thin strips.
Cooking
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  2. Carefully add the seasoned flank steak to the hot pan. Sear for about 4-5 minutes on each side, aiming for medium-rare.
  3. Remove the steak from the pan and let it rest for 5 minutes.
  4. In the same pan, add the sliced onions and bell peppers, sautéing for 5-7 minutes until tender and lightly caramelized.
  5. While the veggies are cooking, slice the rested steak against the grain into thin strips.
  6. Return the steak to the pan, drizzle with lime juice, and combine everything until heated through.
  7. Serve immediately in warm tortillas topped with your choice of toppings.

Notes

For added spice, add sliced jalapeños or crushed red pepper flakes. Introduce fresh herbs for added depth. For a vegetarian version, replace steak with sautéed mushrooms and zucchini.
