Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground beef, breadcrumbs, egg, parsley, garlic powder, Italian seasoning, salt, and pepper. Gently mix until just combined.
- Take half of the meat mixture and form it evenly into a rectangle shape on parchment paper, about ½-inch thick.
- In the middle of the rectangle, place the cubed mozzarella and pour half of the marinara sauce on top.
- Carefully lift and roll the sides of the meat mixture over the cheese and sauce, sealing the ends well.
- Transfer your meatloaf to a baking dish or a lined baking sheet. Spread the remaining marinara sauce over the top.
- Bake for about 1 hour or until the internal temperature reaches 160°F (70°C).
- Once out of the oven, let the meatloaf rest for about 10 minutes before slicing.
- Cut into thick slices and serve.
Notes
Healthier options include swapping half of the beef with ground turkey or chicken. Add cooked spinach or diced bell peppers for a seasonal twist.
