Meatloaf Mixture
  • 1.5 pounds ground beef Choose a blend with some fat content to keep your meatloaf juicy.
  • 1 cup breadcrumbs Opt for Italian-seasoned for an extra flavor boost.
  • 1 large egg Binds the ingredients while adding richness.
  • 0.25 cup fresh parsley Feel free to substitute with dried parsley.
  • 1 teaspoon garlic powder Use minced fresh garlic for a deeper flavor if desired.
  • 1 teaspoon Italian seasoning A must-have for that classic Italian taste.
  • 1 cup mozzarella cheese (cubed) You can use provolone or cheddar for a different flavor.
  • 1 cup marinara sauce Homemade or store-bought works perfectly.
  • to taste salt and pepper Essential for bringing all the flavors together.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, parsley, garlic powder, Italian seasoning, salt, and pepper. Gently mix until just combined.
  3. Take half of the meat mixture and form it evenly into a rectangle shape on parchment paper, about ½-inch thick.
  4. In the middle of the rectangle, place the cubed mozzarella and pour half of the marinara sauce on top.
  5. Carefully lift and roll the sides of the meat mixture over the cheese and sauce, sealing the ends well.
  6. Transfer your meatloaf to a baking dish or a lined baking sheet. Spread the remaining marinara sauce over the top.
  7. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C).
  8. Once out of the oven, let the meatloaf rest for about 10 minutes before slicing.
  9. Cut into thick slices and serve.

Notes

Healthier options include swapping half of the beef with ground turkey or chicken. Add cooked spinach or diced bell peppers for a seasonal twist.
