Method
 

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, eggs, diced bell peppers, garlic, oregano, basil, salt, and pepper. Use your hands to mix until just combined; be careful not to overwork the meat.
  3. Shape the Meatloaf: Place the mixture onto a parchment-lined baking sheet. Using your hands, form a rectangular shape, about 1 inch thick.
  4. Add the Cheese: Create a well in the center of the meat mixture. Layer the shredded mozzarella inside the well, then fold the sides over to encase the cheese.
  5. Top with Marinara: Spread about half of the marinara sauce over the top of the meatloaf.
Baking
  1. Bake: Place the meatloaf in the oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  2. Rest the Meatloaf: Once baked, allow the meatloaf to rest for 10 minutes before slicing.
