  • 1 cup Rice Long-grain or brown rice recommended.
  • 1 medium Onion Diced for flavor base.
  • 2 cloves Garlic Minced to enhance savory goodness.
  • 1 can Crushed Tomatoes For a rich, tangy base.
  • 4 cups Vegetable or Chicken Broth Makes the soup flavorful.
  • 1 teaspoon Oregano Essential seasoning.
  • 1 teaspoon Basil Essential seasoning.
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Pepper To taste.
  • 0.5 cup Parmesan Cheese Optional for garnish.

Method
 

Preparation
  1. Dice your peppers, onion, and garlic.
Cooking
  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the onion and garlic, cooking until translucent, about 3-5 minutes.
  2. Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  3. Stir in the diced bell peppers. Sauté for another 5 minutes until they start to soften.
  4. Add the crushed tomatoes, broth, rice, and seasonings. Stir well and bring to a boil.
  5. Reduce heat to low, cover, and let it simmer for 20 minutes, or until the rice is fully cooked.
  6. Ladle the soup into bowls, garnish with Parmesan cheese if desired, and serve.

Notes

Feel free to add extra veggies like corn or kidney beans for additional nutrition and flavor.
