- Dice your peppers, onion, and garlic.
Cooking
- In a large pot, heat a drizzle of olive oil over medium heat. Add the onion and garlic, cooking until translucent, about 3-5 minutes.
- Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the diced bell peppers. Sauté for another 5 minutes until they start to soften.
- Add the crushed tomatoes, broth, rice, and seasonings. Stir well and bring to a boil.
- Reduce heat to low, cover, and let it simmer for 20 minutes, or until the rice is fully cooked.
- Ladle the soup into bowls, garnish with Parmesan cheese if desired, and serve.
Notes
Feel free to add extra veggies like corn or kidney beans for additional nutrition and flavor.
