Preparation
- Preheat your oven to 350°F (175°C). Line a 9×13-inch pan with parchment, leaving an overhang.
- In a large bowl, beat the softened butter and granulated sugar until pale and fluffy, about 2 to 3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In a separate bowl, whisk together the flour, baking powder, and salt, then gradually fold them into the wet mixture until just combined.
- Press the dough evenly into the prepared pan.
- If desired, sprinkle optional toppings over the top, pressing them gently into the dough.
Baking
- Bake for 18 to 22 minutes, or until the edges are light golden and the center is set.
- Cool completely in the pan on a wire rack, then lift out using the parchment overhang and slice into squares.
Notes
For a lemon glaze, stir 1 cup powdered sugar with 1–2 tablespoons lemon juice. Consider frosting for a party-ready look or use applesauce for a healthier option.
