Preparation
  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch pan with parchment, leaving an overhang.
  2. In a large bowl, beat the softened butter and granulated sugar until pale and fluffy, about 2 to 3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually fold them into the wet mixture until just combined.
  5. Press the dough evenly into the prepared pan.
  6. If desired, sprinkle optional toppings over the top, pressing them gently into the dough.
Baking
  1. Bake for 18 to 22 minutes, or until the edges are light golden and the center is set.
  2. Cool completely in the pan on a wire rack, then lift out using the parchment overhang and slice into squares.

Notes

For a lemon glaze, stir 1 cup powdered sugar with 1–2 tablespoons lemon juice. Consider frosting for a party-ready look or use applesauce for a healthier option.
