Ingredients

Main Ingredients
  • 1 cup unsalted butter, softened adds rich, buttery flavor.
  • 1.5 cups granulated sugar gives that classic sweet snap.
  • 2 large eggs, room temperature for a tender crumb.
  • 1 tablespoon vanilla extract the soul of sugar cookie flavor.
  • 3 cups all-purpose flour provides structure.
  • 1 teaspoon baking powder lifts the bars just enough.
  • 0.5 teaspoon salt balances the sweetness.
Optional Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk swap with almond milk for a dairy-free option.
  • 0.5 teaspoon vanilla

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment for easy lifting.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy — about 2–3 minutes.
  3. Add the eggs one at a time, mixing until incorporated, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet, stirring until just combined.
  6. Press the dough evenly into the prepared pan.
Baking
  1. Bake for 20–25 minutes, or until the edges are golden and a toothpick comes out mostly clean.
  2. Cool completely in the pan on a wire rack.
Glazing and Serving
  1. Once cool, whisk together glaze ingredients and drizzle over the top, or spread your favorite frosting.
  2. Slice into bars and serve.

Notes

Use room temperature eggs and butter for a smoother batter. Store unfrosted bars in an airtight container at room temperature for up to 3 days. Frosted bars should be refrigerated and enjoyed within 4 days.
