  • 1 packet taco seasoning Use homemade for a fresher kick or lower sodium option.
  • 1 cup beef broth Vegetable broth makes this dish vegetarian-friendly.
  • 1 medium bell pepper (diced) Any color adds freshness; yellow or red makes it extra sweet.
  • 1 medium onion (chopped) Red or yellow onions lend a sweet undertone.

  1. In a large pot over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. As it cooks, add in the chopped onion and bell pepper.
  2. Once the meat is browned, drain any excess grease.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Give it a good stir, and let those flavors mingle.
  4. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 20 minutes.
  5. After simmering, taste your Taco Soup and adjust with salt or lime juice as needed.
  6. Ladle the soup into bowls and invite everyone to create their own masterpiece with toppings.

Notes

This soup tastes even better the next day. Consider adding jalapeños for heat or replacing meat with lentils and quinoa for a vegetarian option.
