  • 1 tbsp Cornstarch Can use arrowroot powder as an alternative.
  • 1 tbsp Sesame Oil Imparts nuttiness; can substitute with light olive oil.
For the vegetables
  • 2 cups Broccoli Fresh or frozen; substitutes like bok choy or asparagus can be used.

Preparation
  1. In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, and cornstarch until smooth. This is the marinade.
  2. Add sliced chicken to the marinade, ensuring each piece is well-coated. Let it marinate for at least 10 minutes.
Cooking
  1. Heat sesame oil in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown, about 5-7 minutes.
  2. Toss in the broccoli and stir-fry with the chicken for an additional 3-4 minutes, until the broccoli is vibrant green and crisp-tender.
  3. Pour any leftover marinade into the skillet, stirring to coat everything. Allow it to simmer for about 2 more minutes to thicken the sauce.
Serving
  1. Remove from heat and serve immediately over steamed rice or noodles, drizzling with extra sauce if desired.

Notes

Add nuts for crunch, spice it up with red pepper flakes, or include fruits like pineapple for sweetness. Perfect for meal prep and storing leftovers up to 3 days in the fridge!
