  • 2 large eggs can be replaced with flax 'eggs' for vegan versions
  • 1/4 cup chopped fresh parsley can substitute with basil for a sweeter taste
  • 1 teaspoon smoked paprika can replace with chili powder for a spicier option
  • Salt and pepper to taste for finishing touches
  • 2 tablespoons olive oil for frying; can bake with a spritz of oil for a lighter finish

Preparation
  1. Combine shredded chicken, breadcrumbs, Parmesan, eggs, parsley, smoked paprika, salt, and pepper in a bowl. Mix until the texture holds together when pressed.
  2. Form the mixture into small patties or bite-sized balls, pressing firmly so they hold in the pan.
Cooking
  1. Heat olive oil in a nonstick skillet over medium heat until shimmering.
  2. Add the patties and cook 3–4 minutes per side until golden brown and crisp.
  3. Transfer to a paper towel-lined plate to drain briefly, then finish with a sprinkle of flaky salt and extra parsley. Serve hot.

Notes

For mini bites, adjust size for party platters. To make lighter, use whole-wheat breadcrumbs and bake. For a dessert version, swap spices for sweet ingredients and serve with warm fruit compote.
