- Combine shredded chicken, breadcrumbs, Parmesan, eggs, parsley, smoked paprika, salt, and pepper in a bowl. Mix until the texture holds together when pressed.
- Form the mixture into small patties or bite-sized balls, pressing firmly so they hold in the pan.
Cooking
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Add the patties and cook 3–4 minutes per side until golden brown and crisp.
- Transfer to a paper towel-lined plate to drain briefly, then finish with a sprinkle of flaky salt and extra parsley. Serve hot.
Notes
For mini bites, adjust size for party platters. To make lighter, use whole-wheat breadcrumbs and bake. For a dessert version, swap spices for sweet ingredients and serve with warm fruit compote.
