Ingredients

Pasta and Base Ingredients
  • 1 package cheese-filled tortellini (fresh or frozen)
  • 2 tablespoons unsalted butter Use unsalted for better control of the flavor.
  • 1 cup heavy cream For a lighter option, consider using half-and-half.
  • 2-3 cloves garlic, minced Adds depth of flavor.
  • 1 cup freshly grated Parmesan cheese Fresh is always best.
  • 1 pinch nutmeg Optional but recommended for warmth.
  • to taste salt and pepper Enhances flavor.

Method

Preparation
  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, typically about 3-5 minutes for fresh.
  2. In a separate pan, melt the butter over medium heat until it bubbles and starts to brown, then sauté the minced garlic until fragrant.
  3. Slowly pour in the heavy cream while stirring gently, allowing it to form a silky sauce.
  4. Mix in the grated Parmesan cheese until melted and incorporated. Season with salt, pepper, and nutmeg if desired.
  5. Using a slotted spoon, transfer the cooked tortellini to the sauce and gently toss to coat.
  6. Serve by plating the tortellini and sprinkling extra Parmesan on top, optionally garnished with freshly chopped parsley.

Notes

Feel free to add veggies like spinach or peas, or protein such as grilled chicken or shrimp. For a lighter version, substitute half of the heavy cream with cauliflower puree.
