- Toss in the diced carrots and celery, stirring often for an additional 5 minutes until they soften.
- Add your chicken (if raw, cut into bite-sized pieces) and cook until lightly browned on all sides.
- Pour in the chicken broth, bringing everything to a gentle boil.
- Add in the herbs, salt, and pepper, adjusting to your taste.
- Reduce the heat, cover the pot, and let it simmer for about 20 minutes.
- If you're using rotisserie chicken, shred it and add it in the last 5 minutes of cooking to warm.
- Sprinkle with fresh parsley just before serving.
Notes
