Preparation
  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onions and garlic, sautéing until they become fragrant and translucent.
  3. Toss in the diced carrots and celery, stirring often for an additional 5 minutes until they soften.
  4. Add your chicken (if raw, cut into bite-sized pieces) and cook until lightly browned on all sides.
  5. Pour in the chicken broth, bringing everything to a gentle boil.
  6. Add in the herbs, salt, and pepper, adjusting to your taste.
  7. Reduce the heat, cover the pot, and let it simmer for about 20 minutes.
  8. If you're using rotisserie chicken, shred it and add it in the last 5 minutes of cooking to warm.
  9. Sprinkle with fresh parsley just before serving.
