Preparation
- Preheat your oven to 350°F (175°C).
- Peel, core, and slice the apples into thin wedges. In a bowl, mix with lemon juice, half the brown sugar, cinnamon, and nutmeg.
- In a separate bowl, combine oats, almond flour, melted coconut oil, remaining brown sugar, and a pinch of salt. Mix until crumbly.
Assembly and Baking
- Spread the apple mixture evenly in a 9x13 baking dish. Sprinkle the oat mixture on top.
- Bake for 30 minutes or until the topping is golden and the apples are bubbling.
- Allow to cool slightly before serving.
Notes
Serve warm with vegan ice cream or as a delicious breakfast. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for two months.
