  • 4-5 medium medium apples (Granny Smith or Honeycrisp) Tart and sweet apples for the best filling.
  • 1 tablespoon lemon juice Brightens flavors and prevents browning.
  • 1/2 cup brown sugar Can substitute with maple syrup for a healthier option.
  • 1 teaspoon cinnamon Enhances apple flavor.
  • 1/2 teaspoon nutmeg Adds a festive touch.
For the Crisp Topping
  • 1 cup rolled oats Provides a wholesome and chewy texture.
  • 1/2 cup almond flour Gluten-free; can switch to all-purpose flour.
  • 1/4 cup coconut oil (melted) Can substitute with olive oil.
  • 1/4 teaspoon salt Enhances all flavors.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and slice the apples into thin wedges. In a bowl, mix with lemon juice, half the brown sugar, cinnamon, and nutmeg.
  3. In a separate bowl, combine oats, almond flour, melted coconut oil, remaining brown sugar, and a pinch of salt. Mix until crumbly.
Assembly and Baking
  1. Spread the apple mixture evenly in a 9x13 baking dish. Sprinkle the oat mixture on top.
  2. Bake for 30 minutes or until the topping is golden and the apples are bubbling.
  3. Allow to cool slightly before serving.

Notes

Serve warm with vegan ice cream or as a delicious breakfast. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for two months.
