Preparation
  1. Line an 8-inch square pan with parchment paper, leaving an overhang on the sides.
  2. In a large saucepan, combine the Velveeta cheese, semi-sweet chocolate chips, butter, and cocoa powder over low heat. Stir frequently until melted and smooth.
  3. Remove from heat and stir in the powdered sugar and vanilla extract until fully combined.
  4. Pour the mixture into the prepared pan and spread it evenly.
  5. Refrigerate for about 2 hours or until firm. Lift out of the pan and cut into squares.

Notes

For a dairy-free option, use plant-based cream cheese and vegan chocolate chips. You can also fold in chopped nuts or swirl in peanut butter or caramel before setting.
