  • 4 cups Watermelon, cubed Use seedless watermelon for convenience.
  • 1 large Cucumber, sliced Peel if desired.
  • 1 cup Feta cheese, crumbled Can substitute with goat cheese.
  • 1/4 cup Fresh mint, chopped For added flavor.
  • 2 tablespoons Olive oil Use extra virgin olive oil for the best taste.
  • to taste Salt and pepper Season to enhance flavors.

Method
 

Preparation
  1. Cut the watermelon into bite-sized cubes, discarding the rind.
  2. Peel (if desired) and slice the cucumber thinly.
Assembly
  1. In a large bowl, gently toss the watermelon and cucumber together.
  2. Crumble the feta cheese over the top.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Add finely chopped fresh mint and mix gently to combine.
Serving
  1. Serve immediately or chill in the fridge for a refreshing treat.

Notes

For a festive twist, consider adding diced jalapeƱos or serving in a hollowed-out watermelon. To lighten the recipe, omit feta and use nutritional yeast instead.
