Dry Ingredients

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the sugars, oil, eggs, and vanilla until smooth.
  3. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel. Fold this into the sugar mixture.
  4. In another bowl, combine the flour, baking soda, salt, cinnamon, and any nuts or chocolate chips. Whisk until well-mixed.
  5. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  6. Pour the batter into a greased loaf pan, smoothing the top if needed. Sprinkle extra nuts or chocolate chips on top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Notes

Add 1/2 cup of raisins or dried cranberries for a delightful chewy bite. Incorporate orange or lemon zest for a refreshing twist. To make it vegan, use flax eggs and swap sugar for maple syrup.
