Ingredients

  • 4-6 pieces of chicken (drumsticks, thighs or a mixture)

  • 2 cups buttermilk

  • 2 teaspoons salt

  • 1 tsp black pepper

  • 1 tsp red capsicum

  • 1/2 teaspoon red chili (adjust to taste)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • For coating:
  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • Marinating the Chicken:
  • In a large bowl, whisk together buttermilk, salt, pepper, paprika, cayenne, garlic powder, and onion powder.
  • Dredge the chicken pieces in the buttermilk mixture, making sure they are completely coated.
  • cover the bowl tightly using plastic wrap and refrigerate it for at least 4 hours, or if possible overnight. This helps to tenderize the chicken and infuse flavor.
  • Coating Preparation:
  • Combine flour, salt, pepper, paprika, cayenne pepper, garlic powder and onion powder in a shallow pot.
  • Take out the marinated chicken pieces from the buttermilk mixture and let the excess liquid drain out.
  • Dip chicken into flour mixture, pressing to coat chicken thoroughly.
