I often like to make this wonderful busy day soup for my family!

What I love about this busy day soup recipe is that all you have to do is gather the ingredients, add all the ingredients to the pot, and let your stove work its magic.

You’ll need just a few ingredients to make this soup, like ground beef, mixed frozen vegetables, onion soup mix, diced tomatoes and macaroni, and very little time.

Why this soup called busy day soup? just because you need a few prep time for ingredients and some simple steps to make this mouthwatering soup. So let’s start:

✔️ Take a large soup pot, and heat the olive oil over low to medium heat. You can replace olive oil with your regular cooking oil too. Then add chopped onion and minced garlic to the heated oil and cook it for at least 2 to 3 minutes, or until the onion becomes soft and pink in color.

✔️ Now add ground beef to the pot, and cook until brown, breaking the ground beef into smaller pieces while cooking. when it turns into brown, remove any excess fat, this will prevent your soup from becoming greasy.

✔️ Chop the tomatoes, and don’t drain its juice. Add the chopped tomatoes with juices, tomato sauce, vegetable or beef broth, frozen veggies, spices like dried basil and dried oregano, salt and pepper. You can also add fresh veggies of your choice, or the frozen veggies of your liking. Just go with your choices and likings.

✔️ Bring the soup to a boil, and then reduce the heat to low, cover the pot, and let it cook on low flame for 35 to 40 minutes, or until the veggies become soft.

  • Ground beef – 1 pound

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • Diced tomatoes – 1 can (14.5 ounces)

  • Tomato sauce – 1 can (14.5 ounces)

  • Beef or vegetable broth – 4 cups

  • Mixed frozen vegetables – 1 ¾ Cups

  • dried basil – 1 teaspoon

  • dried oregano – 1 teaspoon

  • Salt and pepper to taste

  • olive oil – 1 tablespoon

Directions

  • Start making your busy day’s soup in a large soup pot, and heat the olive oil over low to medium heat.
  • Add chopped onion and garlic to the pan and fry for 2 to 3 minutes.
  • Add the ground beef to the pot and cook until brown, breaking it into small pieces once cooked.
  • Drain excess fat after cooking the beef, this will prevent your soup from becoming greasy.
  • Now combine the chopped tomatoes with juice, tomato sauce, vegetable or beef broth, frozen vegetables, dried basil, dried oregano, and spices like salt and pepper.
  • Bring the soup to a boil, and then reduce the heat to low, cover the pot, and let it simmer for about 35 to 40 minutes, or until the vegetables are tender.
