Which Flour works best?

In the baking world, we basically find 3 types of flour. All-purpose flour, Bread flour and cake flour. Now the question is, which type of flour you’ll  use for cookies?

All-purpose flour gives you a texture of standard cookies. Not much chewy, nor soft that you were looking for.

Bread Flour on the other side contains  double the amount of protein giving your cookies a healthy touch with great chewier texture.

Cake flour contains baking powder, which makes cookies lighter, and they can spread more with an airy texture.

So in the cookies, we’re using a mixture of two flours, the all-purpose flour and the bread flour to get a perfect texture of cookies.

Which sugar works best?

Again we’ve the same question. Because for baking, we usually use 3 kinds of sugar. White sugar, light brown sugar which contains some amount of molasses and dark brown sugar, which contains double amount of molasses.

Selecting best sugar combo for cookies

As you can see. If we just use white sugar, we’ll not get even a standard flavor of cookie. Using dark brown sugar, the cookies will not able to spread enough, moreover using dark brown sugar, we’ll get an in-depth flavor of molasses which is not much favorite of cookie lovers. And light brown sugar is giving the cookies a chewier texture.

So in the recipe, we’ll prefer to go with a combination of white and dark brown sugar to get a perfect flavor and the goodness of both.

Should You melt butter for cookies?

Many recipes go with softened butter at room temperature. You can also follow it if you’re looking just for an ordinary chocolate chip cookie. But if you’re here to get the best recipe of chocolate chip cookies ever, I’ll tell you the secret behind it.

Here is how you’ll do it..

Bring the butter to a boil while stirring frequently. As the water from the butter begins to boil, the milk solids in the butter will separate, settle to the bottom, and begin to brown.

Ok, when you’re gathering the ingredients. Be sure to weight the ingredients mindfully. For this, you can use a kitchen scale, or measuring cups and measuring spoons for it.

All-purpose flour: 3/4 cup of all-purpose flour will go to the recipe.

Now, the best thing of these cookies is, you can store them easily to enjoy later. For this, follow the steps to store leftover cookies carefully.

Air-tight Container

If you’ve leftover cookies, store them in an air-tight container to prevent them from getting soggy.

Container: For this, you can use resealable plastic bags, plastic containers, or glass containers.

Storing: Just allow the cookies to cool completely at room temperature before storing, then store them in air-tight container and you can store them in at room temperature, away from direct sunlight.

Prevent from sticking: If you’re going to stack the cookies in air-tight container, be sure to place a parchment sheet over each layer of cookies to prevent them from sticking.

To avoid moisture: You can place a piece of bread or a silica gel packet to the container to prevent cookies from getting soggy.

In this way, chocolate chip cookies can stay fresh for up to 1 week easily.

Refrigeration:

To get a firmer texture of cookies, you can place the container in refrigerator. Don’t forget that refrigeration can change the texture of cookies slightly to make them a little more crispy.

So, if you’re planning to enjoy the cookies within a week, don’t try to refrigerate them, just stay them at room temperature with followed our storing technique to keep the cookies fresh and with same texture and flavor.

Freezing:

If you want to freeze cookies for longer time period, this is quite possible and easy.

To thaw them, simply let them come to room temperature at counter. Enjoy!!

Well, if you are making cookies for late parties, or get-togethers, or want to freeze them enjoy after a month or two. I’ll recommend to freeze cookie dough instead of freezing baked cookies. It is best to get freshly baked cookies whenever you want. To do this, follow some simple steps:

  • You may need to add 1 or 2 minutes additional for baking time, but the remaining process will be same.

Ingredient Substitutes

Here are some suggestions for ingredient substitutions, that you can replace. But keep in mind, that swapping any ingredient can make a significant change in texture and flavor of cookies.

Flour

If it’s hard for you to use a mixture of bread flour and all-purpose flour, you can use simply just bread flour or just all-purpose flour for cookies. Or for the last choice, you can use cake flour. It can make the texture of cookies airy or too much spread.

Butter

If you don’t have unsalted butter, you can use regular salted butter or sweet cream butter. Be sure to reduce the salt if you’re using salted butter. You can also use coconut oil instead of butter, but using coconut oil can harder the cookies, and the cookies taste will also change.

Sugar

In the recipe, we’re using a combination of white and dark brown sugar. As we know, dark brown sugar contains double amount of molasses. And if you don’t like the taste of molasses, you can replace dark brown sugar with light brown sugar.

But remember, It will change the taste of cookies and may be, you may not get the best and authentic flavor of cookies, that is what I’m talking about.

Semi-sweetened Chocolate Chips

Although the semi-sweetened chocolate chips are perfect combination with dark chocolate chunks, however you can make a twist by using different flavors of chocolate chips like white chocolate, milk chocolate chips or even dark chocolate chips paired with dark chocolate chunks. Moreover, you can replace dark chocolate chunks with your favorite one.

While you’re substituting the ingredients, mind it to keep the quantities of ingredients in balance to make the cookies good. Also remember that every change in ingredients will change the texture or taste of recipe, so do it carefully.

Common Mistakes to Avoid

Here are some common mistakes, you must avoid when you’re ready to bake great value chocolate chip cookies.

Carelessness in weighing ingredients

If you know baking, you well know the importance of weighing ingredients for baking. Measuring ingredients without any proper measuring scales can spoil the recipe at all.

Be sure to use kitchen scale or measurement cups and spoons to measure the ingredients carefully.

Incorrect Flour Ratio

While measuring the flour for cookies, be sure to measure flour in right quantity to get the best texture of cookies.

Adding too much flour can lead to turn your cookies too much dry, crumbly or chalky.

While adding too little flour can turn your cookies too soft or hard to hold their shapes correctly.

Under-creaming Butter and Sugar

While beating white sugar and dark brown sugar with melted butter, beat it until it make light, fluffy and almost doubled in amount. If you don’t do so, your cookies won’t be fluffy, light and soft – they’ll be flat.

So be sure to melt butter until it gets a nice nutty and brown color, cool it at room temperature and then beat it with mixture of sugars until it becomes light, fluffy and pale in color.

Skipping steps or combining all ingredients at once

If you don’t follow the recipe steps, and combine all ingredients at once by skipping the important steps, it may save your some time. But it will not create the perfect cookies, as you’ve expected.

Mixing all ingredients at once can create lumps, and air in cookies. Moreover, it can hard for you to handle everything at once.

So it’s better to follow the recipe steps strictly to get the same goodness and delicious great value chocolate chip cookies, that you’re looking for.
