Avocado is my all-time favorite, and I always love to create some unique recipes in my kitchen that are not only creative but also use common ingredients found in my kitchen.

So last weekend, I was craving something sweet and savory like my favorite Strawberry Shortcake, but unfortunately, I was out of whipped cream. So I summoned my creativity, and guess what?

I simply replaced the whipped cream with avocado mousse, and the taste was really fantastic! Finally, my new favorite flavor is Avocado and Strawberry Shortcake.

And today, I’m so excited to share with you that easy and perfect recipe for Avocado and Strawberry Shortcakes that will not only satisfy your sweet tooth, but is also a healthy and nutritious dessert, and of course dairy-free. .

Ingredients for Avocado and strawberry Shortcake

For the Shortcakes:

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter, cold and cubed
  • Buttermilk
  • Vanilla extract

For the Avocado Mousse:

  • Avocados, peeled and pitted
  • Granulated sugar
  • Heavy cream
  • Juice and zest of 1 lime

For the Strawberry Topping:

  • Fresh strawberries, hulled and sliced
  • Granulated sugar
  • Balsamic vinegar (optional for a tangy twist)

How to Make Avocado and Strawberry Shortcake?

For the shortcakes:

Step 1:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2:

Take a large mixing bowl and add dry ingredients like flour, sugar, baking powder, baking soda and salt.

Step 3:

Add cold, cubed butter to the dry ingredient mixture. Use your fingers to mix the butter into the dry ingredients until it resembles coarse crumbs.

Step 4:

Add the buttermilk and vanilla extract and stir until the dough becomes homogeneous. Be careful not to over mix.

Step 5:

Knead the dough on a floured surface for a few times. Roll out the dough to a thickness of about 1 inch and use a round cutter to cut out shortcakes.

Step 6:

Place the shortcakes on the prepared baking sheet keeping an even distance and bake for 12-15 minutes or until they are golden brown. Let them cool.


For the Avocado Mousse:

Step 1:

In a blender or food processor, combine ripe avocado, sugar, heavy cream, lemon juice and zest. Blend to make a smooth and creamy mixture.

Step 2:

Add more sugar or lemon juice, taste and adjust sweetness or spiciness as per your preference.


For Strawberry Topping:

In a bowl, mix the chopped strawberries with the granulated sugar and balsamic vinegar, if using. Let the strawberries cook for about 10-15 minutes to release their juice.


Assembling the Shortcakes:

Step 1:

Cut cooled shortcakes in half horizontally. Spread a tablespoon of avocado mousse on the bottom half of each shortcake.

Step 2:

Top with macerated strawberries and their juice. Place top half of shortcake on strawberries. Alternatively, garnish with a dollop of avocado mousse and fresh strawberries.

Step 3:

Enjoy your favorite Strawberry Shortcakes with a new flavor of Avocado.


Pro Tips of Recipe

Avocados: Make sure to use ripe avocados for the recipe. This will make the mousse creamy and smooth.

Keep Ingredients Cold: Use butter and buttermilk as cold as possible to make the shortcakes. This will help to create a tender and flaky texture of shortcake.

Don’t Overmix: Gently mix the dry and wet ingredients until the dough comes together. But be sure not to over-mix. Over-mixing the dough can result in tough shortcakes.

What to Serve with?

Enjoy the avocado and strawberry shortcakes with freshly brewed coffee or espresso, as I do oftenly. I also like to serve this healthy shortcakes with my homemade anabolic ice cream and if you like a zesty flavor, you can simply sprinkle some lemon zest over your avocado and strawberry shortcakes.

How to Store the Leftovers?

Make sure to store the shortcakes, avocado mousse and strawberry toppings separately. By following some simple steps, you can store and enjoy your avocado and strawberry shortcakes for longer time period.

Shortcakes:

use air tight container to store any leftover shortcakes. It can keep fresh at room temperature or in your pantry for up to 2 days.

But if you want to keep them fresh for longer time period, freeze the shortcakes using air tight container, or freezer bag and place them in freezer carefully, in this way, you can enjoy the shortcakes for 2 to 3 months. Thaw them at room temperature when you want to enjoy the frozen shortcakes.


Avocado Mousse:

Avocado mousse can quickly oxidize and change color, so it’s best to use the avocado mousse immediately.

But if you want to store the leftover mousse, place it in an airtight container, and press the plastic wrap directly onto the surface of the mousse, it will minimize the air exposure. In this way, you can store the mousse for at least one day. Stir well before using.


Strawberry Topping:

Leftover strawberry toppings can be stored in refrigerator for up to 2 days using an air-tight container. If the strawberries release more liquid, simply drain it before using them again.
